I really enjoyed Jude Watson's writing in the Jedi Apprentice, Jedi Quest and Last of the Jedi series. Especially, Jedi Apprentice, the relationship between Qui-Gon and Obi-Wan is really wonderful, and adds great depth to their characters.

I've also read the Young Jedi Knights and Junior Jedi Knights series by Kevin Anderson and Rebecca Moesta. The latter series, starring Anakin Solo and Tahiri Veila is better than the former, which stars the Solo Twins.

The Scholatstic books are great for kids, and a quick, enjoyable read for adults!
