Live From Oboe-Wan's Kitchen: Episode 12
Um... yeah... younglings... So last night, we tried out this recipe for vegetable dumplings. In very typical little kid fashion, he misinterpreted a key word at the most humorous moment. He kept calling the dumplings "younglings" which of course had us rolling with laughter!!

And in answer to your question: no. Padawan-Wan wouldn't touch these vegetable dumplings with a 10-foot pole, BUT we did make him "Youngling Dumplings : we filled a few wrappers with just plain Philly Cream Cheese & he actually liked them. OMG, someone get the crash cart, he actually tried them!!!


STEAMED YOUNGLINGS

1 tablespoon vegetable oil
3 scallions, sliced
2 garlic cloves, chopped
2 teaspoons grated fresh ginger
3 tablespoons chopped garlic chives
2 lb. choy sum, shredded
2 tablespoons sweet chili sauce
3 tablespoons chopped cilantro leaves
1/4 cup water chestnuts, drained & chopped
25 gow gee wrappers

Dipping Sauce
1/2 teaspoon sesame oil
1/2 teaspoon peanut oil
1 tablespoon soy sauce
1 tablespoon lime juice
1 small red chili, finely chopped

1) Heat the oil in a frying pan over medium heat and cook the scallions, garlic, ginger, and garlic chives for 1-2 minutes or until soft. Increase the heat to high, add the choy sum & cook for 4-5 minutes or until wilted. Stir in the chili sauce, cilantro, and water chestnuts. Allow to cool. If the mixture is too wet, squeeze dry.

2) Lay a gow gee wrapper on a flat work surface. Place a heaping teaspoon of the filling in the center. Moisten the edge of the wrapper with water and pinch to seal, forming a ball, then trim. Repeat with the remaining gow gee wrappers & filling.

WRAPPING YOUR DUMPLING - what worked great for me was bringing 2 diagonal corners together first, pinching together, the bringing over the remaining two corners & pinching again to seal. I also then pinched the corners created by the folding to seal them shut as well!

3) Fill a steamer/pot 1/2 way with water. Line the steamer basket with baking parchment. Steam the dumplings seam-side up for 5-6 minutes.

To make the dipping sauce, combine all the ingredients. Serve with the dumplings!

Hooray! let me know how you like that dipping sauce. We used a habanera pepper instead....

This recipe is steamed, but i'm sure you could fry them if you have the equipment. ;)

Funny story and sounds really good!! :D More complicated that I have time for though... sadly... :(

Believe it or not, these weren't all that complicated. One pan to cook all the veggies, you let it all sit for a while to cool, then wrapping only took a few minutes. We actually served it as an appetizer! But, whatever, I'll make them for you when you come to visit, so never fear! ;)
