Some of my standout moments are

The shot in ROTJ where Vader tries to get Luke to turn to the Dark Side on that little bridge outside the space station on Endor. Luke doesn't and walks off, and the shot stays on Vader. And you can see everything in his face, even though theres nothing there. You can see the beginnings of him coming back and thats beautiful!

Or in ESB when the Rebels are waiting for the attack on the shield generator on Hoth, The shot focused on a Huge metal disc then it pans out to show a gargantuan AT-AT.

These aren't necessarily my favourite scenes but certainly poignant!
