You will slowly be digested for over a thousand years...well, maybe, but maybe not.
I came across something very interesting about the Sarlacc when looking up random things about it.

First part to note is the way it devours prey that is too big to be eaten in one bite (Rancors, Krayt Dragons, Banthas, etc.). It bites them into smaller chunks. So, it doesn't ignore big food after all.

As the blog's title suggests, the Sarlacc doesn't always digest its victims for over a thousand years. For an explanation of how, it has a primary stomach, where its victims are digested immediately (meaning their deaths occur very quickly, and not in a millenium or so). Sometimes, victims will be sent to one of the secondary stomachs, and that is where millenial digestion occurs (Boba Fett was sent to a secondary stomach).

If I had a choice between which stomach to pick, I would pick primary if I knew that there was no possible way of escape for me, but if I was a master escape artist (meaning very professional), I would pick any stomach, but if it's primary, it will be very tricky. Even if I die, at least I'm not marinating in digestive fluids for a really long time. But just to be safe since it's a matter of chance for which stomach you go to, I would just commit suicide before being eaten, just so I won't suffer for an amount of time way past the average lifespan of a human if sent to the secondary stomach. It would be pointless if the Sarlacc is capable of reanimating corpses or severed body parts (which I hope it doesn't).
