I'm curious about that too. We also get a brief glimps when Ben and Luke are walking back to the cantina after selling the speeder. I've always assumed that they were some kind of coin, at least in the smaller amounts. The larger amounts may just me some kind of transfer. But I don't know.

Good old fashioned beer tokens. Maybe credit card debt became an unsustainable nuisance in the Republic so they did away with them?
